Energy Bites

These little guys are the perfect pre-workout snack for an energy boost -they also happen to taste like candy. Seriously, these things are delicious. So much that you might not believe they are both lactose-free and vegan. I make these for members every time I plan a quarterly launch at my gym and they disappear like hotcakes with adults and kiddos alike.

Energy Bites

Ingredients:

  • 7-8 Medjool Dates
  • A heaping spoonful of Natural Peanut Butter
  • A generous drizzle of raw honey
  • 1 Tbs Cacao Powder (can sub ½ Tbs of Cocoa Powder)
  • ¾ – 1 Cup Old Fashioned Rolled Oats
  • 1 cup unsweetened coconut flakes

Remove pits and allow the dates to soak in warm water for 10 minutes. Pour coconut into a food processor and blend until finely shredded then set aside in a small bowl. Combine dates, peanut butter, honey, oats and cacao powder in food processor, blending until a thick paste forms. Form the paste into inch round balls, then roll each ball in the coconut flakes until fully coated. Refrigerate for an hour and enjoy! Store in refrigerator inside an air-tight container
