It’s also a quick, easy, beginner friendly recipe that only takes about 20-ish minutes to throw together.

Cauliflower Mashed Potatoes

• 1 Large head cauliflower
• 5 Large cloves garlic
• ½ Cup light sour cream
• 1 Tablespoons clarified butter
• Salt and black pepper to taste

Fill a four-quart stockpot with 1-2 inches of water and allow it to come to a boil. While water heats, wash the cauliflower and trip off the greenery and chop up the florets and stem.

Place cauliflower and garlic into the pot, lightly salting. Boil 10 minutes, or until everything is tender. Drain contents of pot then transfer into a food processor or blender, adding butter, sour cream, salt and pepper. Puree until smooth and serve hot. Makes about 4 servings.

  • Do not throw away the cauliflower step when you are chopping and prepping. Keep and add it in just like you would the florets.
  • Don’t be shy with the salt and pepper. It helps to kick up the overall flavor in the dish. I like to add it in doses and taste test until I get the right balance.
  • This recipe freezes very well.

SUBSTITUTIONS:

  • Not a fan of dairy? No problem! Swap the sour cream for Tofutti vegan cream cheese and the clarified butter for Earth Balance butter substitute.
  • If you or your picky eater aren’t completely ready to part with the potatoes (but still want to lighten up on the starch), you can go half and half. Make a smaller serving size of mashed potatoes to mix in with the cauliflower mashed potatoes for the same great flavor with a sneaky extra serving of vegetables.
  • When making substitutions, just keep in mind that your macro count may slightly vary from this specific recipe. If you’re counting macros, just make sure to adjust the recipe macros in a macro calculator based on the ingredients you use.
