Are you ready for my latest holiday Kodiak protein muffin recipe? Because my protein-packed Kodiak gingerbread muffins are here just in time for Christmas.
I thought about calling these protein-packed golden Kodiak gingerbread muffins (because I have managed to sneak some nutritional gold into these babies).
But the title was starting to sound a bit more like a mouthful than the actual muffins, so I simplified.

But now I may have you asking “where’s the gold?”
And rightly so, my muffin-loving friends.
You may have noticed these Kodiak gingerbread muffins have a more yellow hue than your average gingerbread man.
That’s because they’re packing an extra super-food ingredient: Turmeric.
In fact, any time you see a recipe saying “golden this” or “golden that”, it means it’s probably packing a serving of turmeric.
Turmeric is an Indian spice made from the Turmeric root, which for centuries has been praised for its properties as a medicinal herb.

Modern science can back up many of those praises.
Turmeric demonstrates very high levels of antioxidants and may be beneficial in everything from easing inflammation, boosting brain function, lowering risk of heart disease and more.
I like incorporating a daily dose of turmeric in things like my coffee, smoothies and protein muffins.

This is the kind of turmeric I keep in my kitchen. A little goes a long way and this one-pound bag will last you a long time (and it’s less that $7).
My protein-packed Kodiak gingerbread muffins are high-protein, low-fat and full of flavor.
There are many questionable Kodiak protein muffin recipes out there.
That’s why I began experimenting and creating my own.
I felt the recipes on the Kodiak boxes, while tasty, were too high in sugar, fat and calories for my goals.
Other Kodiak protein muffin recipes I found online (and I tried quiet a few) were lower in fat and calories but turned out dry, lacking in flavor and were just a mouthful of disappointment.
And let’s face it, if you’re going to eat a muffin (even a healthy one), it should still taste like a muffin, right?
So I took things into my own hands, experimenting until a muffin emerged with just the right ratio or delicious vs nutritious.
And thus, Reese’s protein-packed muffin recipes were born.
Taste-tested and approved by personal trainers, body builders, macro-counters and comfort eaters alike, these Kodiak protein muffins are for everyone.
Protein-Packed Kodiak Gingerbread Muffins
INGREDIENTS:
- 2 Cups Kodiak Cakes protein packed flapjack mix
- 1 Scoop SFH pure whey vanilla protein powder
- 1 Large egg
- 1 Cup skim milk
- 1/2 Tablespoon of molasses
- 1/2 Cup unsweetened applesauce
- 1 Teaspoon vanilla extract
- 1/2 Teaspoon cinnamon
- 1/2 Teaspoon ground ginger
- 1/2 Teaspoon organic turmeric root powder
- 1/2 Cup Splenda brown sugar blend, plus some to sprinkle
Throw all ingredients into a bowl and mix until smooth. Pour batter into greased muffin tins.
Sprinkle some of the brown sugar blend over each muffin and bake at 350°F for 12-18 minutes (or until they pass the toothpick test). Makes 12 muffins.
PREP TIPS:
- Pay attention to the Kodiak mix you buy (the original mix has 8g of protein per serving while the protein packed version has 14g).
- If you do meal prep in advance each week, keep in mind with fresh ingredients these muffins stay good for about 3 days. When making a big batch, consider freezing some to use as needed so they don’t start to spoil on you by day 4 or 5.
- If you are a sweet-tooth monger like myself, you can never be too generous with that crowning sprinkle of brown sugar.
SUBSTITUTIONS:
- Any protein powder should do, but I’ve found some brands bake better than others. See my list of protein recommendations further down the page for brands I have tested and approved.
- If you’re not a fan of artificial sweeteners like Splenda, you can substitute Stevia or regular sugar.
- You can also substitute soy or coconut milk for the skim milk.
- If you’re vegan, you can swap a vegan baking egg replacer for the chicken egg and use a plant-based protein powder (see vegan protein powder recommendation further down on post).
- When making substitutions, just keep in mind that your macro count may slightly vary from this specific recipe. If you’re counting macros, just make sure to adjust the recipe macros in a macro calculator based on the ingredients you use.

WHERE TO FIND KODIAK CAKE MIX
Quite a few retailers now carry Kodiak Cake mixes and products. I’ve regularly found them in Target, Bi-Lo, Walmart and Publix.
But if you’re struggling to find it at your local grocery store (or, like me, just don’t like leaving your house and prefer things to come to you), no worries. Amazon has got’cha back.

I currently have three boxes of Kodiak’s protein packed buttermilk stocked in our pantry. My husband is a Crossfit coach and personal trainer who does a lot of power and Olympic lifting. He can put away a LOT of food.
So I often opt towards buying Kodiak’s protein packed mixed for that extra boost of protein. You can never go wrong with some classic buttermilk and I make this regularly in muffin, pancake and waffle form as his work week breakfast.

Protein Powder Recommendations
A quality protein powder can make or break the difference in your protein muffin. I try to aim for a low-carb, high-protein powder that’s easy on the taste buds and the digestive system.
Here are three protein powder brands that I’ve tried, approved and will work with my smoothie recipes.
Tasty and Budget-Friendly Whey
Quest Nutrition Protein Powder

Quest Protein powders are gluten-free, soy-free, high-protein and low-carb. Their protein is smooth, delicious and won’t break the bank. I like their vanilla milkshake flavor, but their Cinnamon Crunch protein powder flavor is also great for fall smoothies.
High-Quality, Artificial-Free Whey
SFH Pure Whey Protein Powder
Click here to buy on Amazon
SFH is known for their high-quality protein. Gluten-free and soy-free, their Pure Whey Protein Powder is made of grass-fed whey that is that is 100% GMO and artificial ingredient-free. I’ve really enjoyed both chocolate and vanilla flavors of this protein powder.
Vegan
New Vega Protein & Greens

It can be challenging to find a vegan protein powder that’s low-carb, high-protein and doesn’t taste like cardboard. I tested quite a few of them during my vegan dieting experiment and Vega was actually my favorite. It’s completely dairy, soy and GMO-free and easy on the tastebuds.
Hey there, don’t leave yet!
We’re still getting to know each other! Don’t go away so soon. Here are a few more of my Kodiak recipes that I think you’re going to love.
