Searching for a healthy protein muffin that tastes like a dream? Look no further. These aren’t your grandma’s blueberry muffins (although they taste like they could be). These Kodiak blueberry muffins are low-fat, low-sugar and packed with protein and amazing flavor.
With active lifestyles as personal trainers, my husband and I look for ways to stay on track nutritionally while still enjoying what we eat. And who doesn’t love a good muffin?
A few years ago, we discovered Kodiak Cakes, a company known for flapjack and waffle mixes that are low in fat but rich in protein and complex carbs. You can make a lot of treats with them and muffins are one of our favorites.
A muffin recipe is included on the Kodiak box, but it was fairly high-sugar, high-fat and higher-calorie. I was looking for a way to tweak the nutrients to get more protein and less fat per muffin.
(You know. So you could eat more with zero guilt.)

I searched the web and other blogs for existing recipes but couldn’t find one quite right.
Believe it or not, I even found a couple blogs that advertised having a “healthy blueberry Kodiak muffin recipe” only to discover their directions said “buy a box of Kodiak mix, follow the recipe but add some blueberries at the end.
Of the other existing blueberry Kodiak muffin recipes I found, some had nice flavor and moisture but more fat and less protein. Others had more protein and less fat but came out dry and lacked flavor.
Let’s face it -there’s nothing worse in a muffin than expecting a bite full of happiness but discovering a mouthful of disappointment. Dare I say it, a mouthful of sadness.
So I took things into my own hands, experimenting until a muffin emerged with just the right ratio or delicious vs nutritious.
Taste-tested and approved by personal trainers, body builders, macro-counters and comfort eaters alike, these blueberry Kodiak muffins are for everyone.

Where to find Kodiak Cake Mix
Quite a few retailers now carry Kodiak Cake mixes and products. I’ve regularly found them in Target, Bi-Lo, Walmart and Publix.
But if you’re struggling to find it at your local grocery store (or, like me, just don’t like leaving your house and prefer things to come to you), no worries. Amazon has got’cha back.

Kodiak Cakes have a lot of fun muffin mix varieties, including a blueberry muffin mix. But we like to shake up what flavor muffins we make so I tend to opt towards buying the original flapjack mix. I also always try to buy Kodiak’s protein-packed mixes for that extra boost of protein.

Vegan-Friendly Kodiak Mixes
The majority of Kodiak Cakes mixes contain animal products and are not vegan. But they do have a few vegan-friendly mixes. You may have better luck finding some of these varieties online.

Best Protein Powder for Blueberry Kodiak Muffins
A quality protein powder will make or break the difference in your protein muffin. I try to aim for a low-carb, high-protein powder that’s easy on the taste buds and the digestive system.
If you already have protein powder on hand, feel free to use it for this recipe. But here’s the protein powder brand I used to create these muffins (and what the macros in this recipe are based on).

It can be challenging to find a vegan protein powder that’s low-carb, high-protein and doesn’t taste like cardboard. I tested quite a few of them during my vegan dieting experiment and Vega was actually my favorite. It’s completely dairy, soy and GMO-free and easy on the taste-buds.
Recipe for Protein-Packed Kodiak Blueberry Muffins
INGREDIENTS:
- 2 Cups Kodiak Cakes protein packed flapjack mix
- 1 Scoop SFH pure whey vanilla protein powder
- 1 Large egg
- 1 Cup skim milk
- 1 Cup blueberries, fresh or frozen
- 1/2 Cup unsweetened applesauce
- 1 Teaspoon vanilla extract
- 1/2 Cup Splenda brown sugar blend, plus some to sprinkle
Throw all ingredients, except for blueberries, into a bowl and mix until smooth. Stir blueberries in gently and then pour batter into greased muffin tins.
Sprinkle some of the brown sugar blend over each muffin and bake at 350°F for 12-18 minutes (or until they pass the toothpick test). Makes 12 muffins.
PREP TIPS:
- Pay attention to the Kodiak mix you buy (the original mix has 8g of protein per serving while the protein-packed version has 14g).
- Try to distribute blueberries somewhat evenly between muffins (too many in one will increase moisture and too few will decrease it).
- If you do meal prep in advance each week, keep in mind with fresh ingredients these muffins stay good for about 3 days. When making a big batch, consider freezing some to use as needed so they don’t start to spoil on you by day 4 or 5.
- If you are a sweet-tooth monger like myself, you can never be too generous with that crowning sprinkle of brown sugar (if you count macros, just make sure to account for that in your recipe).
SUBSTITUTIONS:
- For protein substitutes, see my list of protein substitutions further down the page.
- If you’re not a fan of artificial sweeteners like Splenda, you can substitute Stevia or regular sugar.
- You can also substitute soy or coconut milk for the skim milk.
- If you’re vegan, you can swap a vegan baking egg replacer for the chicken egg and use a vegan protein powder (see vegan protein powder recommendation further down on post).
- When making substitutions, just keep in mind that your macro count may slightly vary from this specific recipe. If you’re counting macros, just make sure to adjust the recipe macros in a macro calculator based on the ingredients you use.

Your recipe looks really yummy and I plan to try it out tomorrow morning. We are not big Splenda users. Is there another sweetener that can be substituted? I usually use honey to lightly sweeten my baked goods but adding honey can really change a recipe. Let me know if you have any thoughts. Thank you!

Have you ever tried using Stevia? It is a natural plant-based sweetener and is free of artificial sweeteners and substitutes. It’s about the same consistency as Splenda but more natural! That might work well!

I’d like clarification on “SFH pure whey protein powder”. What is SFH? Will any protein powder work? Will the recipe still work if a person omitted the protein powder?

SFH is a supplement company and that is just their protein powder. To get an accurate macro count for the nutritional information, I calculated everything on the specific ingredients I listed. But any protein powder will work! And the recipe should still work fine without adding the protein powder. 🙂 My husband and I are just gym rats, so we really like that extra boost of protein!

Hey, Kim! For most protein powders I have used for this recipe, I find one scoop is usually around or about 2 tablespoons. But the amount per scoop can vary between brands of protein powder. If you have a particular protein powder in mind, I would recommend Googling how many grams of powder are in a scoop of that company’s protein!

The saturated fat is 0.3 grams and sugar content is 13.3 (some of that does include sugars from the fruit) per muffin. When entering this recipe into the WW calculator, it’s giving me a WW point estimation of 5 points. I count macros in my personal nutritional routine, so I’m not as familiar with the WW point program. But as with any food or recipe, I’d definitely recommend tracking and comparing it with your daily and weekly nutritional goals!

I haven’t tried making it with Greek yogurt, but I’ve heard good things about using that as a butter substitute in baking! Since I’ve swapped apple sauce in as a butter replacement, I don’t see why you wouldn’t be able to try swapping in some Greek yogurt instead! 🙂

I was actually looking through Pinterest for Inspo on protein mug cakes and somehow ended up seeing your recipe on my timeline lol.
I think it’s because I posted a Kodiak cakes lemon almond poppy seed recipe a few days ago.
I substituted some ingredients to make lower cal and more vegan—not completely lol but I try. It turned out fabulous.
Instead of skim milk, I used half water and half silk 80 cal vanilla almond milk since I ran out of my silk 30 cal unsweetened almond milk. I also used 1up nutrition’s Vegan Vanilla Protein.
Im trying to stay away from a lot of sugars, so I also omitted the sugar and used a tablespoon of liquid vanilla stevia and a tblsp of honey to sweeten.
It’s like 1:30 here in NY and I didn’t feel like portioning them in to muffins so I threw it on a sheet pan. It basically turned out tasting like a protein blueberry pancake…just a little thicker. Definitely not sweet like a muffin should be so I plan to drizzle some honey on it when I eat it and maybe a little bit of dairy free yogurt to help.
I know your recipe tastes good with that sugar! You did a great job with the recipe.

I just made these and these are the first and only muffins I’ve been able to make with protein powder that actually fluffed up and are DELICIOUS!! SO good with some melted butter. I am absolutely keeping this and making them again. If anyone is wondering, I didn’t have the splenda mix so I used light brown sugar, almond milk, and Orgain Vanilla Plant Protein Powder. Everything else I left the same. SO SO SO SO SO SO good, so excited to have these for the week. Super easy to make too.

Hey, Kathy! I address this question in the “prep tips” section of the post. With the fresh fruit and ingredients in this recipe, you are correct that these muffins will have a shorter shelf life than some recipes. If you’re making a large batch, I’d recommend you trying freezing any muffins you won’t be able to eat within a few days. Otherwise, I personally like to make smaller batches of this recipe (so everything tases fresh and nothing goes to waste). 🙂
